Chocolate Tart

This is one of my simplest recipes and is jolly delicious.  Be careful not to over cook it or it will taste sour.

Serves 12

Firstly you will need a 12inch pastry case, line this with sweet pastry and blind bake.


  • 5 pints Double Cream
  • 5 tsp Vanilla Extract
  • 500g Dark Chocolate, good quality
  • 3 Whole Eggs


  1. Boil together the cream and vanilla, remove from heat and set to one side.
  2. Add the chocolate and stir in until melted, allow this mix to cool.
  3. Beat the eggs in a bowl and stir them in. The mixture goes a little gluey but this is fine.
  4. Pour the mixture into the tart case and bake in a preheated oven for 20 minutes or until set.

This is delicious served with crème fraiche and fresh blackberries. Enjoy!

You could also alter the taste by adding a cup of espresso coffee to the mix for”choca mocha” or the zest of 2 oranges for a great orange chocolate tart.
