James and the Giant Peach? No, Suzanne James and the Roasted Peach!

June excites me so much a it’s prime English Strawberry Season and the start of Peach Season! This dessert is quite possibly my favourite. The peaches are blanched and then roasted to caramelise the natural sugars. We then add a little granola to the base to stop them sliding on the plate as waiting staff are taking them from the kitchen to the table.

This dessert has some caramelised whole blanched almonds which offer a crunchy praline nuttiness and fresh Scottish Raspberries for added sour sweetness – yes, a sour sweetness that only raspberries offer! We finished with a little cooking juice and boom 👊 perfect dessert
